Straight after picking, the Green Tea Leaf is naturally fermented in bamboo for 6 months. Once fermented the tea is then preserved in oil.

Pickled Tea (aka Lahpet) is from Myanmar (formerly Burma) and is served as a Tea Leaf Salad (Lahpet Thoke), something you have to try when visiting! It's a delicious mix of ingredients such as: Pickled Tea, Peanut Oil, garlic, dried shrimp, tomatoes, fish sauce, lime juice, chillies and Nuts & Beans. In Myanmar, Lahpet was used as a peace offering between kingdoms. Today Tea Leaf is offered when visiting a family home or attending a ceremony. About Bayin John & Katrina met their friend Ye Kyaw Zin during their honeymoon in Myanmar (John's grandmother was Burmese). They fell in love with the country, the people and the Food! During this trip that they visited rural schools and farms and saw the lack of resources for the children and wanted to give back in some way. The 3 friends discussed the idea of exporting Myanmar food to Europe whilst giving back to where the products are sourced. From there Bayin was born.
