Informative in an Illusory Price-point Package
'We eat with our eyes', I've heard it said many times. 'Don't judge a book by its cover', is another famous warning. This little reference book gets a hug from both of these sayings. I respect the Culinary Institute of America; but, honestly, a bit more on the presentation side would have made this book more embraceable, if you will. Nice, colorful hardcover. Then, you open: Lots of useful info, but on nearly see-through, recycled paper of rather flimsy quality. Not only that, but my eyes were being deceived as though the print were blurry - an illusion created by the splotchy-quality paper interefering with the visual perception. Smallish font on thin paper. The paper seemed to have shadows on it because of its poor quality. Wow, for $50.00, it should have at least a few pops of colour & a smidge more oomph! Bon appetit, if you can read it.

Maybe knowledge inside is profesional but still not enough detailed for that price. For 139,99 punds i expected at least colorfull photos with food presentation. Dissapointed, since its grayscale raw print. This book is a shame for Culinary institute of america, expected something more complex and profesional.
